Carrots rank with potatoes as the most recognized root vegetable grown today. What is not known is that the orange carrot is not the only color variety that dates back hundreds of years. The white carrot was taken from the wild; the yellow and violet carrots had their origins in Afghanistan. The common orange variety developed and evolved as a crop in Holland. The orange varieties are grown in all lengths and varieties. They can be grown as extra long varieties as well as dwarf. Chantenay can be grown in shallow soil, and the Danvers Half Long is medium sized; both are orange varieties. Carrots prefer well-worked airy soil for deep-root growth.
